B - Bananas Foster

**I'm posting this super early because tomorrow is going to be a crazy busy day for me and I'm not sure when I'm going to be around the interwebs...so... :) **

In keeping with my Theme...every other post will be Food related...Hence Bananas Foster. The Most Marvelous of Desserts.

I am beautiful when on fire


    One of the first desserts I ever made in a restaurant was Bananas Foster. The real kind. The kind you make table side. Which was terrifying. So much can go wrong! Fire for instance. Fire can go TERRIBLY wrong. But it didn’t. This dessert is so beautifully right, on so many levels. Even if you don’t like bananas, most people like Bananas Foster.
    
The hardest part about this dessert is knowing when to pull the bananas out of the pan, before you add the rum. And it’s got to be done right. And they’ve got the be Good, Hard, JUST under ripe Bananas. Otherwise they’ll just mush apart and you’ll end up with Bananas Mush Foster, and who wants that crap? 

    Done right, one starts with very lowly ingredients and ends up with a magical concoction that transcends all expectations! Butter. Brown Sugar. Allspice, and Nutmeg. Rum. Orange zest. And of course Bananas. Some people argue that you need to add banana liquor. Umm.  Blech. Melt the Butter and brown sugar, add the spices. Let bubble. Add the bananas. These will get just a little caramelized, letting you know it’s time to remove them. You add the rum and orange zest. FLAME! Woosh! And then add everything to the crepe or ice cream. Or both. So wonderful. So fulfilling. Really, the only thing worthy of a banana.

Except possibly maybe peanut butter and rice crispies...but for some reason they would never let me put that on the menu.
